Give a tasty new ancient grain a try with this Freekeh, Black Bean & Herb Salad recipe! Packed with protein, veggies and whole grains to keep you full and satisfied. Watch to learn it in 60 seconds!
Ingredients:
For the Salad:
- Fresh Parsley – 1/2 CUP (chopped)
- Fresh Mint – 1/4 CUP
- Green Onions – 1 Bunch (finely chopped)
- Celery – 1 CUP (thinly sliced)
- Black Beans – 1 CAN (drained and rinsed)
- Freekeh – 1 CUP (cooked)
For the Dressing:
- Garlic – 1 CLOVE (minced)
- Lemon Juice – 1/4 CUP (or half a fresh lemon)
- Extra Virgin Olive Oil – 6 TBSP
- Salt – 1/2 TSP
Directions:
- CHOP ALL OF THE VEGGIES
- COMBINE SALAD INGREDIENTS IN A LARGE BOWL & MIX
- COMBINE DRESSING INGREDIENTS IN A SMALL BOWL & WHISK
- ADD DRESSING TO SALAD
- TOSS
- ENJOY!
