For the Salad:

  • Fresh Parsley – 1/2 CUP (chopped)
  • Fresh Mint – 1/4 CUP
  • Green Onions – 1 Bunch (finely chopped)
  • Celery – 1 CUP (thinly sliced)
  • Black Beans – 1 CAN (drained and rinsed)
  • Freekeh – 1 CUP (cooked)

 

For the Dressing:

Directions:

  1. CHOP ALL OF THE VEGGIES
  2. COMBINE SALAD INGREDIENTS IN A LARGE BOWL & MIX
  3. COMBINE DRESSING INGREDIENTS IN A SMALL BOWL & WHISK
  4. ADD DRESSING TO SALAD
  5. TOSS
