Take your lunch to the next level with this easy vegan buddha bowl in a mason jar. Prep extra ingredients to have healthy lunches all week long! Learn it in 60 seconds!
Ingredients:
For the Tofu Marinade:
- Tamari Gluten Free Soy Sauce – 2 TBSP
- Sesame Oil – 1 TSP
- Rice Vinegar – 1 TSP
For the “Bowl” Layers:
- Extra-Firm Tofu – 1/3 PACKAGE (or full package, if prepping for the week)
- Red Bell Pepper – 1/4 CUP (diced)
- Carrot – 1/4 CUP (diced)
- Cucumber – 1/4 CUP (diced)
- Avocado – 1/4 CUP (diced)
- Mixed Greens – 2 CUPS
- Freekeh – 1/3 CUP (cooked)
For the Cashew Curry Sauce:
- Tamari Gluten Free Soy Sauce – 1 TBSP
- Rice Vinegar – 1 TSP
- Red Curry Paste – 1/2 TSP
- Tahini – 1-1/2 TBSP
- Lemon – 1/2 (juiced)
Directions:
- PREP TOFU MARINADE by combining all ingredients
- CHOP TOFU INTO CUBES (or triangles!)
- LET MARINATE for 10 minutes
- CHOP VEGGIES & SET ASIDE
- COOK TOFU in pan on medium heat for about 10 MIN or until golden
- PREP SAUCE by combining all ingredients
- ADD TO JAR IN LAYERS: MIXED GREENS, FREEKEH, TOFU, VEGGIES, SAUCE
- CLOSE JAR & SHAKE
- ENJOY! Or save it for a later lunch!
