Best Buddha Bowl in a Jar | Learn it in 60 Seconds

Take your lunch to the next level with this easy vegan buddha bowl in a mason jar. Prep extra ingredients to have healthy lunches all week long! Learn it in 60 seconds!

Ingredients:

For the Tofu Marinade:

 

For the “Bowl” Layers:

  • Extra-Firm Tofu – 1/3 PACKAGE (or full package, if prepping for the week)
  • Red Bell Pepper – 1/4 CUP (diced)
  • Carrot – 1/4 CUP (diced)
  • Cucumber – 1/4 CUP (diced)
  • Avocado – 1/4 CUP (diced)
  • Mixed Greens – 2 CUPS
  • Freekeh – 1/3 CUP (cooked)

 

For the Cashew Curry Sauce:

Directions:

  1. PREP TOFU MARINADE by combining all ingredients
  2. CHOP TOFU INTO CUBES (or triangles!)
  3. LET MARINATE for 10 minutes
  4. CHOP VEGGIES & SET ASIDE
  5. COOK TOFU in pan on medium heat for about 10 MIN or until golden
  6. PREP SAUCE by combining all ingredients
  7. ADD TO JAR IN LAYERS: MIXED GREENS, FREEKEH, TOFU, VEGGIES, SAUCE
  8. CLOSE JAR & SHAKE
  9. ENJOY! Or save it for a later lunch!
