This is the perfect meal if you like to keep it light and easy in the mornings. If you are planning on doing any activities such as hiking or water sports, you may want to avoid a heavy meal. Top it off with sliced strawberries for added sweetness and unsweetened coconut flakes for a little crunch.

Lunch: Fire Roasted Black Bean Chili
This classic, hearty chili recipe comes together in a pinch and is always a crowd-pleaser. It can be made on either a stovetop in a large pot, or in a cast iron skillet on a grill over the fire. Everything can be prepared in one pan, which will stream-line your cooking process, leaving you with more time to enjoy the outdoors.
This dish features Muir Glen Organic Crushed Fire Roasted Tomatoes which will provide a bold flavour for the base as well as sautéed onions, garlic and bell peppers. For protein, Eden Organic Canned Black Beans provide 12 grams per serving and are canned with kombu seaweed which reduces digestive gas and bloating commonly associated with eating beans. Add in your spices—chili powder, oregano, cumin, sea salt and pepper. Finish with a pinch of cayenne (or more!) depending on your spice preference.

Dinner: Pulled Jack Fruit Sliders with Corn on the Cob
Pulled Jackfruit Sliders provide the perfect plant-based spin on your classic pulled pork sandwich.
